TK14 Ranch smoked barbecue chicken is a family favorite. Start by selecting a 5 to 6 lb. plump bird. Rinse well with water and remove inside parts. Rub chicken with lemon pepper, garlic powder and cayenne pepper then place in a sealed plastic bag and marinade over night.
Stand chicken over a wrack with a can holder filled with 1/2 can of beer. Place chicken toward the back of pit away from fire or fire box. Toss 3 or 4 wet mesquite chips on the coals and smoke bird for 1 hr at 225 degrees F. Mop with sauce shown below every 30 to 45 minutes. Cook for another 3 to 4 hours at 225 until outside chicken skin is crispy brown.
BBQ Chicken Mop Ingredients:
6 lemons
1 cup butter
1 cup beer
1 cup apple cider vinegar
1 med onion finely chopped
1 clove garlic finely chopped
1 tsp cayenne pepper
1 tsp Tabasco
1 tsp Pepper
1 tsp Salt
Saute onions & garlic in butter.
Add other ingredients and simmer for 15 minutes.
